Salmon and Spinach Frittata

Serves:  1

1 cup Zeagold egg white
50g smoked salmon
1 block frozen spinach, thawed
3 broccoli florets, fresh or frozen
2 tomatoes, sliced
Salt and pepper

1.    Break the broccoli up into smaller pieces and blanch in boiling water or microwave.
2.    Combine all the ingredients in a bowl. Mix gently.
3.    Pour into a silicone or ceramic baking dish.
4.    Bake for 20 minutes, until set, or microwave for 4 minutes.
5.    Leave to rest for a minute before serving.

Tuna
Capsicum
Spring onion
Courgettes
